Winter can be - blah! Grey skies and matching trees. When you add color to your plate, you are nourishing your body and brightening your surroundings!
Tip the scales in favor of your wellness and shop for these this week:
1. Yellow butternut squash. This squash is often sold already cubed for your convenience. Try tossing it in a pot with pure water, fresh garlic, onion, green apple and peeled ginger. Cook it down then blend for an easy and colorful soup, with a hint of spice from the ginger.
2. Purple Cabbage. It's a big ball of joy! Slice it or shred it. Add it to your salad, or make a salad of it all on its own. I enjoy it shredded with chopped fresh parsley, and tahini sauce and coconut vinegar drizzled over the top.
3. Berries! So simple, so colorful, and so loaded with antioxidants. Once you rinse your blackberries or raspberries, make a point of eating them the same day. Otherwise, they have a tendency to mold. For strawberries, wash and slice and store in a ceramic or glass bowl. These will last a few days. Get in the habit of snacking on your berries.
With added color on your plate, your mood will be boosted and you can beat those winter blahs!
